My salad with green lentils and sesame cream sauce

At SHIGETA PARIS, we believe that taking care of your inner health is just as crucial as outer beauty. In fact, the two are closely linked.


After the heavy meals of the end-of-year holidays, you have to pay attention to your diet. This is why I am offering you a recipe that will do your body good and counteract the negative effects of excess salt, sugar and fat. It is therefore important to stock up on vegetables, especially lentils.

Why lentils?

Lentils, rich in fiber and potassium, help regulate blood pressure and maintain a regular heart rate. This helps to balance the intake of salt, sugar and fat. In addition, they are an important source of iron and vitamin B1.

Ingredients (1 serving) :

      • 1 handful of mustard greens
      • 1 handful of green lentils
      • ½ lawyer
      • ¼ daikon or ½ turnip
      • 1 tablespoon of olive oil
      • A little curry powder
      • A pinch of salt

The sauce:

      • ¼ firm tofu
      • 1 tablespoon of tahini (sesame cream)
      • 1 teaspoon of lemon juice
      • 1 teaspoon of honey
      • ½ teaspoon wasabi
      • ½ teaspoon tamari (fermented soy)
      • A pinch of salt

Cook the lentils in 2.5 volumes of water for 10 minutes and leave to cool.
Peel the avocado and scoop out its flesh with a spoon, peel and cut the daikon into thin slices, then into quarters.
Mix everything with the olive oil, add the salt and curry powder.
Mix together all the sauce ingredients.
Arrange the salad on the plate and serve with the sauce on the side.
