RELAX – My anti-stress salad

You’ll find these three ingredients in our delicious recipe for red quinoa with curry, perfect for feeling calmer after stressful periods.

Ingredients (for one person):

  • 1 handful red quinoa
  • 1 cube vegetable broth
  • 1/4 onion
  • 1/4 zucchini
  • 3 cherry tomatoes
  • 1/8 red bell pepper
  • 2 pieces flat parsley
  • 1 tbsp live oil
  • 1 tsp curry powder
  • 1 small piece grated ginger
  • Salt and freshly ground pepper

Cook the quinoa in 3 to 4 parts water (with the vegetable broth), for about 15 minutes. Sauté the chopped onion in olive oil. Cut the zucchini and bell pepper into small pieces, and the cherry tomatoes into 4. Chop the flat-leaf parsley. Mix all ingredients with the warm quinoa.
